Ammonium carbonate is suitable as a leavening agent, pH-control agent, dough strengthener and texturizer. It was used in experiment to distinguish 26 different phenolic components and in Capillary electrophoresis-mass spectrometry (CE-MS/MS) as rapid screening technique.
