Chemical Properties

Lyophilized powder, 23 kDa
Soluble in water, insoluble in most organic solvents.

Papain, from papaya latex, has been used to digest carotid artery smooth muscle cells. Papain is used in dissecting solutions. It is used to produce Fab fragments of antibodies. It is used for cell dissociation since it has been shown to be more effective and less damaging with certain tissues.

Activates to at least 15 units per mg protein. One unit hydrolyzes one micromole of benzoyl-L-arginine ethyl ester per minute at 25 C and pH 6.2 after activation in a solution containing 1.1 mM EDTA, 0.067 mM mercaptoethanol and 5.5 mM cysteine-HCl for 30 minutes.
